Cocos beans are a typical variety of this legume, coming from Tuscany. They are white, roundish, of medium size; they are characterized by a delicate flavor, powdery dough and thin skin. They are excellent for preparing soups and very creamy soups. Thanks to their thinner skin than other types of beans, they need less than average time to soak in water. Consequently also the cooking times are lower. As for the nutritional characteristics, instead, the Cocos beans have the same beneficial properties of the other types of beans.
