Cannellini beans are legumes particularly rich in glucodrine, substances able to reduce blood sugar and are therefore particularly suitable for people suffering from diabetes, especially those who struggle to eat vegetables regularly. They also contain lecithin, which allows to emulsify fats not only by limiting their absorption in the blood but even their persistence and this makes them an extremely suitable food for those who suffer from high cholesterol or have a diet rich in fat. They are an excellent source of vitamins, such as B1, B2 and B3, of mineral salts, such as calcium, phosphorus, iron, zinc and are particularly suitable also for their purifying effect, because they are rich in pectin and inulin. They are rich in vegetable protein and complex carbohydrates.
